Happy Anniversary to Us!

Last Sunday was Scott and my 11th wedding anniversary! We celebrated as a family by going on a hike and then going go get fondue! We've never been before and thought the girls would get a kick out of it. Who doesn't like melty cheesy food and chocolate dipped anything, right? Turns out they weren't so into the cheese or the main course (hot pot is WAAAAAAY better) but of course, they could not get enough of the chocolate. Nora would have licked her plate and the chocolate pot if we had let her!

Scott and I celebrated on our own yesterday by going out to dinner at Opus Co, a small, hip restaurant down the street from our old house in Phinney while the girls hung out with Grammy and Grandpa. This restaurant has been on my list to try for a while now and in fact, I've made (and had to cancel) reservations with them probably three times already for various reasons. Anyway, we finally made it and it was fun and interesting and so cool to have such a foodie type restaurant in our old hood. Made me feel warm and fuzzy inside! We did the tasting menu and I neglected to take photos of all of our dishes, so here's just a few.

Smoked meat app: pork rillete with picked watermelon,
smoked pork loin with a szechuan peppercorn crust, and lamb spam 
Super yummy salad with a tomato crisp, spicy chick peas, pickled okra and cilantro vinagrette. Super good.


Homemade sausage and Pork something. Side of crispy rice, pickled turnips and heirloom cucumbers with something something. :)

Happy new year!!

Goodness, it's already 2025! It's been a really long time since we posted!  We had a very lazy new year. We flew back from LA on the evening of the 31st so spent the last remaining hours of 2024 cozying up on the couch and then fell asleep before it even hit midnight! On New Years day, we slept in, cleaned up the house and then did a quick hike the next day. All in all, a good start to the year! Nora's new blanket hoodie. Cold and muddy trails. We're not in LA anymore! We hiked the Primrose trail that follows Coal Creek.  

Eating on the road

With all the COVID restrictions on restaurants and Scott not liking takeout service, we've gotten pretty good at planning meals for days we are out and about. We've basically taken to tailgating... a lot! It is nice though that it means having a hot meal to warm up after a day of playing in the snow and I'm not going to lie - it is also a good excuse to eat instant noodles because it is fast and easy and warming!   For overnight stays, we end up doing instant pot meals like one-pot spaghetti or chili, or easy meals like a cheese plate or sandwiches. It does save on $ so that's definitely nice but man, I can't wait to go out to restaurants again! Beef and barley soup lunch at Mt Baker. Chillin' with Chili at Crystal Mountain. We picked up our finished creations from the glass blowing class we took a few weeks ago and I think they came out great! Can you tell who made which one? Nora's sunset pumpkin, May's bluebird and Evie's snow pumpkin.
